Summer Cole Slaw with Peaches

​Servings: 6-8 as a side
 
Ingredients:
3 tablespoons mayonnaise*
3 tablespoons plain yogurt (I use nondairy Kite-Hill unsweetened almond milk yogurt)
1 to 2 teaspoons hot sauce (I like Veracha)
1 lime, juiced
½ teaspoon sugar
½ cup fresh cilantro, chopped
1 small head cabbage, thinly sliced
1 carrot, grated
2 radish, sliced thin
1 ripe peach or nectarine, sliced into thin strips
½ small red onion, thinly sliced
Salt to taste (about ½ teaspoon)


Directions:
  1. Whisk together the mayonnaise, yogurt, hot sauce, lime juice, sugar, salt and cilantro.
  2. Toss with the cabbage, carrot, radish, peach, and red onion.
  3. Refrigerate.  The flavors get even better the longer it marinates.

​     Serve cold.  Bon Appetit!
 
*You can skip the mayo and use 3 additional tablespoons of yogurt, which would decrease the calories per serving from 92 to 55, and decrease the fat per serving from 5g to 1g.
